Strawberry cupcakes are yummy!

We have a family wedding coming up, and my son and I wanted something to take so that we can have cake, too. These strawberry cupcakes definitely fit the bill! So tasty! Neither of us will feel deprived.

I love these cupcakes. I feel like they used to be a little softer though. The cream inside I think used to be softer and the cake itself used to be a little softer or maybe I'm just remembering wrong or got an off batch this time. Even so they are some of the best gluten-free cupcakes you can get!

I love strawberry frosted pastries, and these are no exceptions. They are delicious. The only thing that I'm not too big a fan of is that the cake itself leaves little grease/butter residue on your fingers makes it taste better tho. If you are curious about he frosting(s) the top is like a soft shell and can be crumbly at times (depending on how much you let it thaw out) and the internal frosting is a delicious creamy texture. 10/10 recommended if you are a strawberry fan like I am.
