Ingredients
Prepare the Filling:
- In a mixing bowl, combine the ricotta cheese, cream cheese, and powdered sugar. Beat with an electric mixer for 3- 5 minutes until smooth and creamy.
- Add the vanilla extract. Beat for another 30 seconds.
- Taste the filling and adjust the sweetness by adding more powdered sugar in 2 tablespoon increments if needed.
- Gently fold in the mini chocolate chips.
Make the Cannoli Chips:
- Cut open the Katz Gluten- free chocolate chip toaster pastries and slice them into chip-sized pieces.
- Arrange the pastry pieces on the toaster oven rack in a single layer.
- Toast until golden brown and crispy. Keep a close eye on them as toasting times may vary.
