- Prepare the Sweet Potatoes: Preheat your oven to 375°F (190°C). Peel and chop the sweet potatoes into large chunks. Boil or steam them until tender, about 15–20 minutes. Drain and mash until smooth. Alternatively, you can bake the sweet potatoes whole for about 1 hour at 400°F (200°C) and then scoop out the flesh.
- Make the Filling: In a large bowl, combine the mashed sweet potatoes, melted butter, milk, brown sugar, beaten eggs, vanilla extract, cinnamon, nutmeg, and salt. Mix well until smooth and creamy. You can add more brown sugar for sweetness or increase the cinnamon or nutmeg for more spice.
- Make the Crumble Topping: In a separate bowl, mix crumbled Katz donuts, melted butter and brown sugar.
- Layer and Bake: Transfer the sweet potato mixture to a greased baking dish and spread it out evenly. Layer the donut crumble mixture evenly on top. Bake uncovered for about 25–30 minutes, until slightly golden on top.
- Add optional additional toppings like mini marshmallows or pecans for extra texture or flavor!
